I have a confession. I’m terribly ashamed, but it simply has to come out.
I love Oreo cookies, but I absolutely despise the filling.
It’s true, I was that weird kid who twisted them open and peeled out the filling. My friends and siblings loved me. I despised the stuff, and was really mystified when they came out with “double stuff” cookies. Where was the ones without that stuff?
I do adore chocolate, but in all of the chocolate recipes that I’d ever tried, I’d never found one that approximated that dark chocolate taste, not too sweet, but oh-so-chocolatey.
I have FOUND ONE!!!
Well that’s not exactly true. I didn’t find one. I found a recipe for sugar cookies dating from the 40s. I took that recipe, changed it a bit, added Hershey’s Special Dark Cocoa…and voila!
I have my perfect chocolate cookie. Even better, I can mix up the dough, make it into a log, and have fresh chocolate cookies whenever I want. That’s better because I live on the Gulf Coast…the land of perpetually soggy cookies. Nothing stays crispy for long in our humidity, and it’s pouring rain again tonight, complete with flood warnings and the possibility of hail.
I can’t even worry about my newly sprouted garden when I have cookies this delicious.
When I’m this happy, this ecstatic, I wonder….
Should I share the recipe, or hoard it away?
I haven’t decided!
