Not everyone has an oven, the time to bake, or even the basic skills to bake. That doesn’t mean that there is no options available for making a Christmas treat, whether to take or serve at home. One fun option is to make a variation of Rice Krispy treats, instead dyeing the marshmallow mixture green, and instead of pressing it into a pan to cut into squares, it’s formed into a big wreath, decorated with cinnamon red hots, and maybe even given a festive red ribbon bow to turn it into an edible decoration. Another option is to make an edible “bowl” to serve candies or other small tidbits out of.
Face it, anything made with melted marshmallows and butter is bound to be good, right?
To shape the wreath, simply take a large piece of waxed paper, lightly spray it with non-stick spray, and lay it over a sheet of paper on which the circle has been drawn with a marker (to make it easy to see through waxed paper.) The mixture IS hot, so be careful to not burn yourself, and you’ll have to work quickly to form the wreath before the mixture cools and loses its ability to be formed and stick together. When the wreath is all shaped and pressed together, stick on the red hot candies. Let the wreath cool before using a toothpick to “tack” the bow onto the bottom and remove from waxed paper.
To make an edible bowl, simply invert a 2 quart bowl on a pan or plate. Cover the bowl with plastic wrap and lightly spray with non stick spray. Make the treat mixture, either with crisp rice cereal or corn flakes, then place the cereal mixture on the bottom (now on top) of the bowl. Working quickly, press it into shape on the outside of the bowl, with a flat base and covering the sides evenly. When finished forming the shape, invert the entire covered bowl back onto its base on a plate that has been sprayed with non-stick spray. Press the rim of the bowl down to ensure a flat base on the cereal bowl, then return to its upside down position to let the cereal mixture cool. Let cool, then carefully remove bowl and plastic wrap from cereal mixture.
Cereal marshmallow treats
- 1/2 cup butter
- 30 large marshmallows
- 1 1/2 teaspoons green food coloring (may be omitted for bowl)
- 1 teaspoon vanilla extract
- 4 cups cornflakes cereal (or crisp rice, if preferred, for bowl)
- 2 dozen cinnamon red hot candies (for wreath)
Melt butter in a large saucepan over low heat. Add marshmallows and cook until melted, stirring constantly. Remove from heat, and stir in the food coloring, vanilla, and cereal.
Quickly place the mixture onto waxed paper, and form into shape with lightly greased fingers.
Allow to cool to room temperature before removing from waxed paper, and store in an airtight container until ready to display and serve.
