Peppermint is one of the season’s flavors. It’s everywhere. At the same time, we expect it to be everywhere. Combined with chocolate, many of us will reach a state of sweet euphoria.
It’s usually combined in candies, and this is a twist on a familiar flavor combination–cookies. The filling is peppermint, the cookies are chocolate, and its perfect for serving at home or packaging up for a lovely hostess or holiday gift.
Chocolate Peppermint Cookies
- 1/2 c. shortening
- 1/2 c. sugar
- 1 egg
- 3 tbsp. milk
- 2 squares unsweetened chocolate (2 oz.) melted
- 1 3/4 c. all purpose flour
- 1 tsp. salt
- 1/2 tsp. baking powder
- (peppermint filling-recipe below)
Mix shortening, sugar, and egg thoroughly. Blend in milk and cooled melted chocolate. Mix flour, salt, and baking powder in a small bowl. Stir into shortening mixture. Mold dough into a smooth roll about 2″ in diameter and wrap in waxed paper. Chill until firm, overnight or several hours.
Heat oven to 400 degrees F. Using a thin knife, slice dough roll into slices 1/8″ thick. Bake on lightly greased cookie sheet for 10-12 minutes. Cool on rack. Place two cookies together with the peppermint filling like a sandwich. Makes about 30 filled cookies.
- 3 tbsp. heavy cream
- 1/4 tsp. peppermint extract
- 2 c. sifted powdered sugar
- green or red food coloring (optional)
Blend cream with peppermint extract, and then into powdered sugar. Stir until smooth. If desired, filling can be tinted pink or green with food coloring (or half & half!)
