Bar cookies are fast and easy to make, without the fussing that many other cookies take. They are easy to bake too, and can be made quickly while achieving other holiday tasks, such as wrapping those gifts or writing out cards. For busy moms, they can be a life saver for that special treat for taking to school for parties, serving at home, or taking along to a holiday party.
These toffee bars are an old fashioned favorite, with all of the flavor of toffee and far easier to make. Coated with chocolate and sprinkled with nuts, they are attractive enough to appeal too.
- 1 c. butter or margarine
- 1 c. brown sugar (packed)
- 1 egg yolk
- 1 tsp. vanilla
- 2 c. all purpose flour
- 1/4 tsp. salt
- 1/4 c. finely chopped nuts
- 3-4 milk chocolate bars (regular sized bars) broken into small pieces
Preheat oven to 350 degrees F. Grease a baking sheet.
Mix butter, sugar, egg yolk, and vanilla. Add flour and salt, stir until well blended. Spread into a 10×13″ rectangle on greased baking sheet, leaving about 1″ empty pan around the cookie dough’s edges. Bake 20-25 minutes or until cookies are nicely browned. Crust will still be soft. Remove from oven and immediately sprinkle top with chocolate bar pieces evenly across top of cookies. Let stand until chocolate is soft, and spread chocolate evenly over top of cookies. Sprinkle with chopped nuts. Cut bars while still soft & warm into small squares.
